Bimber Oloroso Finish Cask #250 Single Malt Whiskey 700ml
Bimber Distillery is a small, family-run producer based in West London, founded by a group of whisky enthusiasts intent on reviving traditional Scottish methods on English soil. Since laying down its first casks in 2016, the distillery has built a reputation for a fruit-forward, handcrafted style, sourcing barley from a single farm and controlling nearly every stage of production onsite, from floor malting to bottling.
This release began as new-make spirit distilled in small, direct-fired copper pot stills after a slow, seven-day fermentation in hand-built wooden washbacks. The whiskey matured first in an ex-bourbon barrel before being transferred to a single oloroso sherry cask, numbered 250/1, for finishing. Bottled without chill filtration or added color for the American market, the whiskey emerged at a robust 58.2% ABV from a very limited outturn.
On the nose, candied pineapple and red berries mingle with walnut shell, licorice, and baking spice. The palate turns richly textured, layering sweet stewed fruit with ginger, pepper, and clove oil alongside creamy oak, sultanas, and orange peel. The finish brings warm, aromatic spice balanced against a lingering sweetness that reflects the sherry cask's influence.
