Cazcanes No. 7 is produced at NOM 1614 in Amatitán, Jalisco, where the distillery has built its identity around additive-free, organic, and kosher-certified production using no diffuser and no shortcuts. The brand trucks in natural volcanic spring water from the Navichi Springs near Hostotipaquillo for every batch, both for cooking the agave and for proofing the finished spirit. Cazcanes ages this añejo to taste rather than to a set calendar, blending together barrels that range from about one to over two years old until the flavor profile matches what the distillers are after.

Production starts with 100% organic Blue Weber agave, cooked in a low pressure autoclave over a 24-hour cycle to gently lock in its natural sugars. The juice is extracted through a four-pass roller mill, fermented in stainless steel vats with a proprietary yeast strain, then double distilled in stainless steel pot stills with copper coils. The resulting spirit rests in used American oak barrels that have been reworked and recharred, a process meant to draw out fresh wood character from casks that have already seen use.

That blended barrel approach produces real depth. Heavy sweet agave, vanilla, and coconut lead the nose, with a slight hint of nutmeg and chocolate underneath. On the palate, warm baking spices and vanilla carry sweet coconut undertones, finishing soft and long with lingering chocolate and a final touch of vanilla.
