Cazcanes operates out of NOM 1614 in Amatitán, Jalisco, under the guidance of Don Chico, whose hands-on approach favors raw agave intensity over the polished sweetness common in mass-market blancos. The brand markets itself as a revival of pre-industrial tequila making, sourcing lowland Valle agave rather than the highland agave more commonly used by premium brands, a choice that leans into earthier, more vegetal, and spicier flavors. Every batch uses natural spring water trucked in from the Navichi Springs, and the finished spirit is certified both organic and kosher.
The agave is cooked in a low pressure autoclave over a 24-hour cycle, a method chosen to gently concentrate its natural sugars, then extracted through a four-pass roller mill. After fermentation in stainless steel vats with a proprietary yeast strain and double distillation in stainless steel pots with copper coils, the tequila is aerated before bottling and then rested in stainless steel for one to three months. That short rest is unusual for a blanco and gives the spirit more body and roundness than most unaged tequilas typically show.
The result carries real depth for a blanco. Warm cooked agave, wet earth, and a distinctive hint of cotija cheese open the nose. On the palate, savory roasted peppers and salted almonds meet a bright, herbaceous citrus kick, finishing long with a touch of tannic grip and a final note of mint.
