The De Carlo family has farmed in Bitritto, a small town near Bari in Puglia, since at least the 16th century, when its olive groves first appear in local archives. Best known for award-winning extra virgin olive oil milled at its own family mill, the estate also grows vegetables under its olive trees and preserves them on site. Organic production began in the early 1990s, and the family has shared its Pugliese products with the world since the 1980s.

Termite di Bitetto is a local Pugliese variety grown only in a handful of towns around Bari, including Bitetto, Bitonto, Bitritto, and Modugno, where the soils give the fruit its flavor, fragrance, and firm flesh. De Carlo preserves the olives in a simple brine of salt and water.

The olives range in color from green and purple to black, with a firm bite. Their flavor starts gentle and mild, then finishes with a very slight bitterness that gives the variety its distinctive character, leaving a savory, briny impression. It is a simple, traditional style that lets the olive itself take center stage.
