The Moutarderie Fallot in Beaune traces its roots to 1840, when Léon Bouley opened a mustard and oil mill in the heart of Burgundy’s wine country. Edmond Fallot took over in 1928, and the business is now led by his grandson, Marc Désarménien. It remains the last independent, family-owned mustard mill in Burgundy, still operating on its original premises a short walk from the Hospices de Beaune, and has helped lead a revival of mustard seed cultivation in the region.

Fallot is known for grinding its mustard seeds slowly between traditional millstones, a method that keeps the seeds from overheating and preserves their aromatic heat. For this specialty, the stone-ground paste is blended with white wine, vinegar, and salt, then enriched with crème de cassis de Dijon, the celebrated blackcurrant liqueur of Burgundy, along with natural blackcurrant flavor. A natural color derived from cochineal gives the mustard its distinctive violet hue.

The flavor opens with bright, tangy blackcurrant and a gentle fruity sweetness, followed by the clean, rising heat of true Dijon mustard. The texture is smooth and creamy, and the finish balances lingering berry notes with a pleasant peppery bite.
