Pedro Rodríguez e Hijos is a family sherry house based in Jerez de la Frontera, in the heart of Andalucía's Jerez-Xérès-Sherry region, and is now part of the well established Barbadillo group. The house draws on fruit grown around Gibalbin and Santa Lucía, in the prized Jerez Superior zone known for its chalky white albariza soils, which help the Palomino grape retain freshness through the region's hot growing season.
The base wine begins as a dry Palomino sherry, aged under a traditional solera system in American oak casks, the same method used across Jerez to build layered complexity through gradual blending of younger and older vintages. For this medium style, the dry base is blended with a touch of sweeter, richer wine, following the classic Jerez practice of balancing dryness and sweetness rather than fermenting a single sweet must from the start.
The result is deep golden in color, with warm, nutty aromas laced with caramel and light vanilla. On the palate it is medium-dry, full bodied, and robust, showing dried fruit, toasted nuts, and a touch of spice through a long, lingering finish. It works well as an aperitif or after a meal, and pairs nicely with cured meats, mature hard cheeses, or simple nut-based snacks.
