Château de Saü has stood in the Têt Valley near Thuir, in French Roussillon, since 1846, though the estate didn't bottle its own wine until 1986, when fourth-generation owner Hervé Passama and his wife, Béatrice, returned to run it themselves. The couple converted the vineyards to organic farming by 2006 and built the domaine's reputation on two specialties: a spicy Rivesaltes ambré and this rarer Rancio bottling, made in the last years of Hervé's life before his death in 2014. Both wines draw on the same tiny plot of ancient Grenache Gris vines behind the château.

The grapes come from a 1.9-hectare vineyard of seventy-year-old bush vines, picked by hand and given a week-long maceration before fermentation. Elevage then takes place in a former horse stable behind the château, where used Bordeaux barrels are stacked two and three high in a cellar whose temperature can swing widely with the seasons, encouraging slow oxidation and evaporation. Left there without topping up for roughly two decades, the wine concentrates dramatically, developing the deep, nutty rancio character this style is prized for.

The 2001 offers a dense, complex nose of toasted nuts, dried fruit, coffee, and pipe tobacco, with notes of caramel and preserved stone fruit layered in. On the palate it's rich and unctuous, more raisin and burnt honey up front, with savory, salty undertones carrying through a long, warming finish. Serve it slightly cool alongside roasted chestnuts, a piece of aged blue cheese, or dark chocolate desserts.
