Cédric Bouchard left a career as a sommelier in 2000 to found Roses de Jeanne, working tiny parcels of vines in Celles-sur-Ource, in the Aube district of southern Champagne. Rather than blending across sites and vintages in the traditional Champagne style, Bouchard bottles each of his plots separately, treating them more like single-vineyard Burgundy crus than typical grower Champagne. His approach, built on organic farming, low yields, and minimal cellar intervention, has made him one of the region's most closely watched producers.

Les Ursules comes from a single parcel of less than one hectare, planted entirely to Pinot Noir on the shallow, chalky soils of the Côte des Bar. The grapes are harvested by hand and traditionally foot-trodden, then fermented with native yeasts, largely in stainless steel, before aging on the lees. The wine is bottled with no dosage added at disgorgement, letting the fruit and terroir speak without any softening sweetness.

The 2017 shows aromas of quince, red currant, and fresh bread, layered over a taut mineral core. On the palate it is concentrated yet lifted, with fine, persistent bubbles and a long, saline finish. Pair it with raw shellfish, cured ham, or a simple grilled fish.
