Hugues Beaulieu traces back to a cave coopérative founded in 1932 in Pomérols, a small commune tucked between the garrigue scrubland of Pézenas and the Mediterranean coast near Mont Saint-Clair in Sète. Over the decades the cooperative expanded through mergers with the Cave de Castelnau de Guers in 2003 and the Cave de Mèze in 2007, and today it draws on roughly 350 member growers farming close to 1,800 hectares, with a significant share dedicated to Picpoul.

This wine is made entirely from Piquepoul, a grape that has grown along this stretch of coast since the fourteenth century, though the Picpoul de Pinet appellation itself only gained official AOC status in 2013. The vines are planted on sun-drenched, clay and limestone terraces close to the sea, conditions that help the grape retain its trademark brightness and salinity. The wine is traditionally bottled in the distinctive fluted green "Neptune" bottle associated with the region.

The 2025 vintage pours pale yellow with green tints and offers aromas of grapefruit, lime, and exotic fruit. The palate is crisp and focused, with zesty acidity and a clean, saline finish. It is a natural match for oysters, mussels, or a platter of raw seafood.
