NV Agrapart - Champagne Extra Brut 7 Crus
The entry-level cuvée from one of the Côte des Blancs' most revered grower estates, founded in Avize in 1894 and now farmed organically by fourth-generation vigneron Pascal Agrapart and his son Amboise. Sourced from 70% Grand Cru and 30% Premier Cru vineyards across seven villages surrounding Avize: Avize, Oger, Oiry, and Cramant for the Grand Crus, plus Avenay Val d'Or, Bergères-lès-Vertus, and Mardeuil for the Premier Crus. Native yeast fermented, with 50% of reserve wines aged six months in barrel; full malolactic fermentation; unfined and unfiltered; aged 20–32 months on lees; dosage 4–5 g/L. Bright, wispy aromas of Spartan apple, nashi pear, brioche, cold butter, and white flowers; pristine on the palate with a satiny mousse, orchard fruit intensity, and soft radiating acidity to a beautiful, refreshing finish. An "entry-level" wine only by this house's extraordinary standards.
