Éphémère began in 2014 as a small collaborative project started by Frédéric Savart and a handful of longtime friends who wanted to shine a light on overlooked vineyard sites across Champagne. Rather than working from a fixed estate, the project sources exceptional parcels or finished wines from growers it partners with, releasing each cuvée as a one-time, numbered bottling that is never repeated. Édition 029 marks the project's seventh anniversary and brings together Savart, known for the precision and tension of his own wines from Écueil, with Alexandre Chartogne of Chartogne-Taillet, whose style leans toward richer texture and a deeply earthy sense of place.

This édition is drawn entirely from Grand Cru Chardonnay grown in Avize and Cramant, based on the 2022 harvest, and rests on its lees for an extended period before a light dosage is applied at disgorgement. Only a limited run of bottles was produced, reflecting the project's focus on small, exploratory releases rather than consistent annual production.

The wine shows real depth and volume, with taut acidity and a saline, chalky finish typical of these Côte des Blancs sites. Pair it with fresh crab, a delicate white fish, or a mild goat cheese.
