A benchmark grower Champagne from one of Ambonnay's most dedicated producers — a Demeter-certified biodynamic estate whose vineyards sit within one of only five Grand Cru villages on the Montagne de Reims. A multi-vintage blend drawn from several harvests, with 90% fermented and aged in barrel and only partial malolactic fermentation, preserving the wine's signature tension and freshness. On the nose, very chalky and mineral — almost austere — with lanolin, strawberries, and a subtle whisper of pastry. Light-bodied with pinprick bubbles on the palate; savory and focused with crisp, integrated acidity, vinous flavors, and a long, polished finish. Power and amplitude coexist with precision and vibrancy — qualities that give the wine its brightness and freshness, often lacking in southern Montagne de Reims Champagnes. in oak with most of the wines having avoided malolactic fermentation.

Creaminess and creamy oatmeal surround slight hints of plum on the

nose. The rich and concentrated palate, with salty soy edges and

caramelized apple, makes for intense savoriness. With Pinot-structure

and undoubted power, this is nonetheless elegant and poised with
