NV Stephane Tissot - Cremant du Jura Dosage Zero (750ml)
Bénédicte and Stéphane Tissot farm thirty-five hectares across the Jura, continuing a domaine that Stéphane's father André founded in 1962. Stéphane made his first vintage at nineteen and soon abandoned commercial yeasts in favor of a more hands-off, terroir-driven style, eventually converting the estate to organic farming and then biodynamic practices, certified since 2004. The couple now produces close to thirty distinct cuvées, each vinified separately according to its specific plot and soil type.
This bottling blends Pinot Noir and Chardonnay with small amounts of Trousseau and Poulsard, following the méthode traditionnelle required of Crémant du Jura. A significant portion of the base wine ferments in oak barrel rather than steel, adding texture and depth, before the finished wine spends an extended period aging on its lees in bottle. It is disgorged with no dosage, leaving the wine fully dry and letting the fruit and terroir speak without added sugar.
The result is golden in color with pink glints, showing a smoky bouquet of ripe orchard fruit, buttered toast, and chamomile. The palate is rich yet lively, with citrus and a hint of anise carrying through to a long, mineral finish. It pairs well with shellfish, roasted poultry, or aged cheeses.
