This 2024 Grauburgunder is harvested at optimal ripeness and fermented in a thoughtful blend of stainless steel, large neutral oak casks, and concrete tanks to preserve freshness and acidity. It is unfined before bottling and does not undergo malolactic fermentation, helping maintain its bright, mineral-driven character.
