Bailoni is Austria's first apricot distillery, founded in 1872 in Krems-Stein within the Wachau Valley, when grappa distiller Eugenio Bailoni fell in love with the region and its fruit alongside his wife, Rosa. The independently owned family company still operates from its original building, now more than 350 years old, and has passed its apricot expertise down through five generations, with Claudia Bailoni representing the current generation at the helm.

The apricots come from the Wachau Valley, a region protected for apricot growing and home to roughly 100,000 trees, around 1,500 of which belong to Bailoni itself, with additional fruit sourced from neighboring family farms. The valley's loess soil, a fertile silty earth, gives the fruit its notably sweet, juicy character. Ripe apricots are hand harvested, pitted, and pressed, then fermented under controlled traditional conditions before undergoing triple distillation, a process that concentrates the fruit's aromatics into a clear, unsweetened eau de vie rather than the sweeter, colored liqueur the house also produces.

The result is intensely fruity and aromatic, with the concentrated essence of ripe apricot carried through on a clean, dry palate. Little softening sweetness remains, letting the pure distilled fruit character come through from nose to finish.

In the 1930's, Bailoni focused on the production of premium apricot specialties and has since become the preeminent producer of apricot liqueur in Austria. The Wachau Valley has approximately 100,000 apricot trees with Bailoni owning 1,500 of their own. In the valley, one will find 200 farms of varying sizes. The family company supports their fellow family-owned regional farms in sourcing additional apricot needs. The silty soil in which the trees grow, called loess, imparts the ultra-sweet and juicy character of the fruit and the intense deep apricot flavor. In the spring the trees open their blossoms; an experience that contends with cherry blossom time in Washington D.C. or Japan. The apricot fruit that matures in late summer, mid-July to August, is packed with pectin, acid and sugar. The perfect ripeness to develop aromatic brandy and liqueur.
