Assembly Gin comes from Republic Restoratives, a small-batch, women-owned distillery and craft cocktail bar in Washington, DC. The company was founded by Pia Carusone, who spent years in politics as Chief of Staff to Congresswoman Gabby Giffords before turning to distilling, alongside co-founders who trace their heritage to Sicilian immigrants. Assembly, the distillery's first gin, took shape over several years of development and was named for the constitutional right to gather peacefully and speak out, a theme that grew more resonant to the founders as they worked on the recipe through a period of protest and political upheaval.
The gin draws on more than twenty botanicals, built around a savory, herbaceous style rooted in Italian culinary tradition rather than the citrus-forward profile common to many American gins. Sustainably sourced red juniper native to the eastern United States forms the backbone, joined by dried tomato, fresh basil, bay leaves, fennel, olive leaves, mandarin, lemon zest, and hand-picked tomato leaf grown by local farmers, all assembled and distilled by hand at the DC distillery.
The result is a distinctly savory gin, leaning into tomato and basil alongside herbal bay leaf and fennel rather than the piney juniper notes typical of the category. Bright citrus from mandarin and lemon zest lifts the profile, while olive leaf adds a subtle, bitter green undertone. It finishes clean and herbaceous, closer to a garden or a kitchen than a classic juniper-forward gin.
