Diamantis Winery is the work of Dimitrios Diamantis, who is almost single-handedly reviving Siatista, a once-celebrated but nearly forgotten winemaking town in Western Macedonia, Greece. His grandfather hand-grafted the family's centennial vineyard in the early twentieth century, and in the 1990s Dimitrios used that surviving genetic material to replant eighteen hectares on the Magoutes slopes, later joined by business partner George Papageorgiou. Together they are pursuing PDO status for Siatista, which would make it the fifth Xinomavro-based appellation in Greece.

The Magoutes vineyard sits at a striking altitude, between roughly 750 and 890 meters on the limestone and clay slopes of the Askio mountain foothills, giving the fruit a cool, mineral-driven character distinct from lower-lying Xinomavro regions like Naoussa. Farming is certified organic with naturally low yields, and this bottling is unoaked and made without filtration, letting the vineyard's high-elevation terroir speak clearly through the finished wine.

Often likened to a mountain Nebbiolo, this Xinomavro shows a vivid, aromatic profile of wild red flowers, lilac, and baking spice, carried by the grape's characteristic high acidity and firm tannin. The palate is medium bodied and youthful, with bright red fruit and a long, mineral finish. It pairs naturally with grilled lamb, tomato-based risottos, or a simple charcuterie board.
