Monemvasia Winery Tsimbidi was founded in 1997 by George Tsimbidi in the coastal town of Monemvasia in Laconia, in the southeastern Peloponnese, with the goal of reviving Malvasia wine at the very place that gave the style its name centuries ago. The estate has since grown into a broader project celebrating rare Greek grapes, now run alongside George's daughters Elli, Marialena, and Anastasia, who bring formal training in agricultural science, chemistry, and oenology to the family operation.

Jackal marks something of a rarity for the estate, a single-varietal Limniona grown far from the grape's traditional home in Thessaly. The fruit is estate-grown and organically farmed on warm, dry hills, then undergoes spontaneous fermentation with native yeasts in small stainless steel tanks over roughly two weeks of extraction. The wine matures on its fine lees for twelve months with periodic stirring, a technique meant to build texture and depth without any oak influence.

The finished wine shows a deep ruby color and an inviting nose of sour cherry, red cherry, and wild raspberry, with light herbal and spice undertones. On the palate, it's medium bodied with velvety tannins, balanced acidity, and a long, faintly saline finish. It's an easygoing pairing for grilled lamb, pasta with red sauce, or a spread of Greek meze.
