Paros Farming Community is a nearly century-old agricultural cooperative on the Cycladic island of Paros, its roots tracing back to small farming collectives formed in the 1920s. Under winemaker Dimitris Mansolas and a new generation of growers, the co-op has modernized its winery while staying committed to the island's two native grapes, Monemvasia and Mandilaria, working out of vineyards planted at altitude on schist and igneous soils.

Cuvée Topos Red is a co-fermented blend of roughly 45% Mandilaria and 55% Monemvasia, an unusual pairing since Paros PDO uniquely permits a white variety in its red wines. Grapes undergo a four-day cold soak before fermenting at controlled temperatures for around 25 days, followed by a warmer post-fermentation phase. After malolactic fermentation, the wine spends about a year resting across a combination of stainless steel and oak.

The finished wine pours a deep, vivid red with purple hues. Cherry and raspberry aromas lead, layered with savory, almost wild notes, while the palate carries structure and bright acidity alongside gentle pepper and herb accents on the finish. It pairs nicely with roasted beef, pork with prunes, or grilled tuna.
