Christos Zafeirakis is credited with almost single-handedly reviving Limniona, an ancient indigenous grape that had nearly disappeared before he began championing it. A fourth-generation grower in Tyrnavos, in the foothills of Mount Olympos, Christos studied winemaking in Athens and Italy before returning to run the family estate, which has farmed this land for over a century. His roughly twelve hectares of vines are certified organic, and since 2019 he has incorporated biodynamic practices as well, reflecting a broader commitment to letting this rare variety express itself with minimal intervention.

This rosé is a direct press of whole Limniona bunches, pressed as soon as they arrive at the cellar to capture maximum freshness and delicacy of color. Fermentation happens spontaneously in stainless steel using only indigenous yeast, with no oak influence and no shortcuts taken. The vines grow in sandy clay soil heavily laced with flint, a combination that Zafeirakis believes contributes to the wine's distinct saline character. Limniona's naturally high acidity and thick skins make it particularly well suited to this style.

The wine pours a pale coral color, opening with aromas of wild strawberry, cranberry, and dried Mediterranean herbs, followed by a brisk, saline snap on the finish. The palate is bone dry and taut, with real structure and a savory edge that sets it apart from softer, fruit-forward rosé styles. It pairs beautifully with grilled octopus, mezze platters, or fresh sardines with lemon.
