High N' Wicked Foursquare 2007 Cask Single Grain Irish Whiskey 750ml

High n' Wicked launches specialty bottlings called "Singular Limited Releases" several times a year, pairing standout casks with existing Irish whiskey stocks. This particular release, the seventh in the series, came from a collaboration between Richard Seale of Foursquare Rum Distillery in Barbados and Noel Sweeney, the former master distiller at Cooley, who selected and finished the whiskey for High n' Wicked. It marked one of the brand's more distinctive crossovers, pairing an Irish base spirit with rum casks sourced from a highly regarded Caribbean producer.

This expression is a single grain Irish whiskey distilled in County Cork on a continuous Coffey column still, from a mash bill of 95% French maize and 5% malted barley. It was first matured in ex-bourbon barrels before finishing for six months in casks that had previously held Foursquare's "Mark X 2007" Barbados rum, a limited-edition release from 2019. The whiskey is bottled non-chill filtered at 100 proof, a robust strength that helps carry the layered influence of its double cask maturation.

The nose brings coconut, treacle, and lemon peel alongside almond, fig, and vanilla, with a suggestion of tropical fruit in the background. On the palate, warm clove and cinnamon give way to rich caramel and candied hazelnut, finishing with a soft, custardy sweetness. That rum cask character makes it a natural fit for a tiki-style cocktail such as a mai tai, and it also holds its own in a simple whiskey and cola.
