Skellig Six18 Irish Pot Still Gin comes from Skellig Six18 Distillery, housed in a repurposed textile factory in Cahersiveen along Ireland's Skellig Coast in County Kerry. The distillery takes its name from the six hundred and eighteen stone steps that lead up Skellig Michael to a monastery built at the edge of the known world by sixth-century monks, whose resilience and grit inspired the founders, a group with deep roots in Cahersiveen who returned home to build the brand. The core botanicals were developed with input from noted Irish chef Ross Lewis, aiming to root the gin firmly in its coastal surroundings.
The gin is distilled in small batches using a bespoke copper pot still and pure mountain water, with ten botanicals separated into seven individual distillates to draw out the truest character from each ingredient. These are then blended slowly over six weeks to let the flavors fully integrate. Among the defining botanicals are locally foraged yarrow, fresh Douglas fir needles, birch sap, and dillisk, a native seaweed, each contributing to a gin with a strong sense of the wild Atlantic landscape it comes from.
The result is a herbaceous, smooth gin built around citrus and pink grapefruit notes. The Douglas fir lends a resinous, green quality, while the yarrow and birch sap add earthy, slightly bitter depth beneath the brighter citrus top notes. The seven separate distillates come together into a well-integrated spirit rather than one dominated by any single ingredient, giving it a distinct maritime character shaped by its County Kerry origins.
