The 2019 Zymē Amarone della Valpolicella Classico achieves its characteristic density through a three-month natural air-drying period, blending Corvina, Corvinone, Rondinella, and Oseleta harvested exclusively from limestone and clay soils in Valpolicella. Cultivated over thirty hectares by winemaker Celestino Gaspari, whose technique was shaped during his tenure alongside Giuseppe Quintarelli, the estate practices organic fertilization, manual canopy management, and careful cluster thinning across mature vineyards. Bunches are picked in late September and placed in shallow wooden crates for semi-drying without climate control until January pressing. Native yeast fermentation in stainless steel and concrete tanks is followed by two-plus months of skin contact and a minimum five-year resting period in large Slavonian oak oval barrels.

Tasting Notes

Aromatics open with camphor, crushed sour cherry, black pepper, and sun-cured leaves. The medium-body palate carries dense fruit weight alongside firm structure, cushioned by velvety tannins and brightened by crisp acidity that leads to a chalky, restrained finish.
