Sourced from sustainably farmed vineyards across roughly thirty hectares in Valpolicella Classica, the 2019 Zymé Valpolicella Classico Superiore Ripasso achieves concentrated depth through Italy’s traditional double-fermentation technique. Hand-harvested Corvina, Corvinone, Rondinella, and Oseleta grapes undergo primary fermentation in September and October, then spend approximately fifteen days in January macerating on leftover Amarone pomace. This extended skin contact builds additional tannic structure and complexity while preserving the variety’s native acidity.
Aged a minimum of two years in large Slavonian oak casks followed by six months of bottle rest, the wine pours a ruby red fading toward garnet. The bouquet opens with ripe cherry, Morello cherry, and dried plum, transitioning to a soft, enveloping full-bodied palate marked by warm spice and polished fruit that carries across a long, persistent finish.
