Constructed beside the historic Naviglio di Bomporto canal in 1920, Cantina della Volta has spent decades refining sparkling techniques originally studied directly in Épernay. By applying the classic méthode traditionnelle to the region’s palest and most acidic Lambrusco di Sorbara varietal, this 2020 vintage achieves a structured profile that now earns regular placement at Modena’s three-Michelin-starred Osteria Francescana.

Hand-harvested during the final week of September from vineyards rooted in calcareous clay and chalk-rich deposits, the fruit is gently pressed before a brief skin maceration extracts the characteristic bright pink hue. After primary fermentation in temperature-controlled steel and a six-month tank rest, the base wine completes a secondary fermentation in bottle. Extended aging on the fine lees for a minimum of 42 months builds body before riddling, disgorgement, and a precise light dosage.
