2021 Viberti, Giovanni - Barolo Buon Padre (750Ml)
Cultivated exclusively from Nebbiolo grapes at high elevation in the Alagna Valsusso zone, the 2021 Giovanni Viberti Barolo Buona Padre delivers the alpine minerality and structural precision that define Langhe’s premium crus.
This release traces directly to the acclaimed 2021 Piedmont growing season, where delayed budbreak paired with consistent daytime sunshine and cool nighttime lows yielded uniformly ripe fruit with restored natural acidity and refined phenolic maturity. The winery employs extended skin contact and traditional malolactic fermentation before resting the finished wine in large Slavonian oak casks. The method preserves vibrant fruit architecture while rounding edges into a cohesive five-year-debut profile that continues developing gracefully through the 2030s.
On the palate, expect layered aromas of dried sour cherry, crushed violet, cured tobacco, forest duff, and finely ground black pepper. The mid-palate carries a polished tannin matrix that grips firmly before releasing a saline, iron-rich finish. Serving temperature matters significantly: chill slightly below cellar temperature (sixty-two to sixty-four degrees Fahrenheit) to highlight fresh red fruit, then allow the glass to warm gradually so darker stone-fruit and leather notes emerge.
The wine performs best alongside protein-dense, umami-driven dishes that complement rather than compete with its acidity. Slow-braised wild boar ragu, grilled rib-eye with roasted garlic jus, wild mushroom and pecorino risotto, or aged Castelmagno provide ideal balance. Decant for ninety minutes prior to pouring, or store upright on the counter for three to four hours to achieve full aromatic transparency.
