Master winemaker Celestino Gaspari ferments each tracked lot with native yeasts in temperature-controlled steel and concrete tanks for twenty to twenty-five days. The must then transitions into French oak barriques for a minimum of three years, followed by a full year of static bottle maturation before release.

This extended aging protocol grounds the diverse fruit components, resulting in a rich, full-bodied wine that pours a brilliant ruby hue. The aromatic profile stacks ripe orchard fruit over damp forest floor, cured tobacco, and baking spices such as cinnamon, nutmeg, and clove. On the palate, Kairos delivers a round, concentrated mouthfeel marked by polished tannins and a notably persistent finish.
