At 1,200 meters above sea level on the Italian flank of Mont Blanc, these vines remain isolated from phylloxera, delivering a rare opportunity to taste 100% ungrafted Prié Blanc grown in some of Europe’s highest commercial vineyards.


The 2024 Ermes Pavese cuvée translates that extreme altitude into a lean, racy white built for precision hillside farming and cool-climate winemaking. Fruit is harvested entirely by hand across steep terrain, undergoes a brief maceration, and is gently pressed as whole clusters. Conditioning in temperature-controlled stainless steel preserves primary aromatics, while extended lees contact and a spontaneous malolactic conversion add subtle body without softening the crisp mineral backbone.


Tasting notes reveal a tight, saline-driven profile layered with crushed-rock minerality, bright lime zest, green apple, white peach, and quiet accents of alpine wildflowers and dried herbs. The finish stays razor-sharp and highly persistent.


This highly versatile acidic structure cuts through rich oils and fresh brine, making it an ideal match for crudo, poached or grilled freshwater fish, young chèvre, and fennel-citrus salads.
