The 2025 La Staffa Mai Sentito channels Staffolo’s limestone-rich slopes into a dry, spontaneously fermented frizzante that rewards cool service with crisp acidity and saline length. Built primarily from Verdicchio with a trace of Trebbiano, the hand-harvested fruit comes exclusively from the Contrada Castellaretta vineyard (400–500 m elevation), where calcium-heavy clay provides the structural backbone for this expression.

Enologist Riccardo Baldi initiates fermentation via traditional piece de cuve, then clarifies the juice and seals it in bottle before the initial sugar conversion completes. Remaining carbohydrates continue fermenting under crown cap, generating the signature light sparkle. A minimum six months on fine lees rounds the edges and anchors volatile aromatics without adding sweetness.

The poured glass registers pale yellow with a slight haze, releasing pronounced layers of wild fennel, toasted brioche, and active yeast over sharp pear and citrus rind. Palate delivery is lean and tangy, framed by bright acidity and a lingering stony aftertaste. Match cured meats or sliced salami against the bubbles’ cleansing lift, or pair simple white fish preparations like lemon-garlic branzino.
