Giulio Cocchi founded his eponymous company in the Piedmont town of Asti in 1891, originally as a producer of aromatized wines and sparkling wine using the classic method. His Vermouth di Torino recipe fell out of favor for much of the twentieth century, until the company revived the original formula in 2011 to mark the 120th anniversary of its founding. Cocchi remains rooted in the Piedmont region, credited with helping spark renewed international interest in traditional, high-end Italian vermouth after decades in which mass-market brands had come to define the category.
The vermouth uses estate Moscato d'Asti as its wine base, prized for its floral aromatics and natural sweetness, which is then infused with a proprietary blend of botanicals including cinchona bark, rhubarb, wormwood, and citrus peel. Rather than vanilla or caramel flavoring, Cocchi relies on fire-browned sugar to build its deep amber color and a toasted, almost crunchy sweetness that rounds out the bitter elements. Vermouth di Torino holds a protected geographical designation, one of just two such classifications for vermouth worldwide.
On the palate, this vermouth is rich and layered, opening with orange peel, cocoa, and warm spice before giving way to notes of rhubarb, dried fruit, and a lingering herbal bitterness with hints of camphor and rosemary. It carries real weight and complexity without feeling heavy, making it a favorite for building depth into a Negroni, Manhattan, or Martinez.
