Marolo Grappa di Amarone 375ml
Marolo is a family-run distillery based in Alba, in Italy's Piedmont region, founded in 1977 by master distiller Paolo Marolo. Paolo built the company's reputation as a "Mestro Grappaiolo" by treating each bottling as an original expression of its source grape, sourcing fresh, single-variety pomace from respected wine regions across Italy and distilling it with hands-on attention to aroma and character rather than industrial consistency.
This grappa is made from the pomace of Corvina, Corvinone, and Rondinella grapes, sourced from small Valpolicella producers who share Marolo's artisanal approach. Because Amarone grapes undergo the appassimento drying process before fermentation, the pomace arrives already concentrated in aroma, and it is pressed later in the season than most other varieties. The marc is distilled gently in traditional bain-marie stills at controlled temperatures, then aged roughly three years in oak barriques previously used for Recioto bianco, which gives the finished spirit its deep amber color.
The result is a rich, mellow grappa with fruity cherry notes layered over almond and hazelnut, closing with mint and anise. Balsamic and herbal undertones round out the palate, along with subtle hints of caramel drawn from the barrel aging.
