Marolo is a small, family-run distillery founded in 1977 by Paolo Marolo, a former teacher at Alba's Oenological School who set out to reinvent grappa as a refined, artisanal spirit rather than the rough byproduct it had long been considered. Based just outside Alba in Piedmont, the distillery has since passed largely into the hands of Paolo's son, Lorenzo, who continues the tradition of sourcing pomace from some of Italy's most celebrated wine regions to craft single-variety grappas that showcase each grape's individual character.

This expression is distilled from the pomace of Sangiovese Grosso left over from Brunello di Montalcino production in Tuscany. Marolo uses traditional bain-marie pot stills, working in small batches over a slow, gentle distillation to preserve the delicate aromatics of the skins and seeds rather than pushing for speed or volume, a method the distillery has favored since its founding as a deliberate departure from industrial grappa production.

The nose offers dried rose, dark cherry, leather, and warm tobacco, with an undercurrent of dark spice reminiscent of the wine itself. On the palate it is full-bodied yet polished, with a silky warmth and a long, contemplative finish. Best served in a small tulip glass at room temperature, this grappa makes a fitting after-dinner pour alongside dark chocolate or simply on its own.
