Benjamin Serer spent years cooking in Michelin-starred kitchens for the Ducasse group before returning to his native Tours to pursue winemaking, training at the famed Vouvray estates Clos Naudin and Vincent Carême along the way. He established his own domaine in 2019 in Vernou-sur-Brenne with under two hectares of vines and has since expanded to seven, farming the estate organically with no pesticides or herbicides. His vines average fifty years of age, growing in clay-limestone soil near the celebrated Clos de Bourg, and the fruit is harvested by hand with native yeast fermentation.

Les Trois Chênes is a dry Vouvray made entirely from Chenin Blanc, vinified in stainless steel to protect the freshness and fruit character of the vintage. The 2023 season in the Loire brought mixed weather overall, though a mild winter and gentle spring helped the vines settle in well before harvest. The wine spends several months aging before release, giving it time to develop complexity while retaining the bright, mineral-driven style typical of the appellation's limestone terroir.

The wine opens with ripe pear, green apple, and citrus blossom, moving into a textured, electric palate marked by wet stone and a faint saline edge. The finish is long and taut, with real aging potential ahead of it. Serve chilled alongside shellfish, roast poultry, or fresh goat cheese.
