Domaine Lafage is a family estate in Roussillon dating back to 1798, now guided by seventh-generation vignerons Jean-Marc and Éliane Lafage. Before returning home to take over the property in the late 1990s, the couple spent years making wine abroad, gaining experience in South America, California, South Africa, and Australia. Their vineyards form a mosaic stretching from the Mediterranean coast at Canet-en-Roussillon to the foothills of the Pyrenees, and their wines, including this cuvée developed with longtime importer Eric Solomon, have helped build the estate's reputation well beyond France.

Novellum is made entirely from Chardonnay grown on Lafage's plots close to the sea, where the maritime climate lends the grape unusual depth and minerality. Rather than relying on heavy oak, the wine spends part of its aging in tank on Viognier lees, with a smaller portion finished in barrel, a combination that builds texture and richness while keeping the fruit forward.

The result is a golden-hued white with aromas of white peach, pear, and citrus, accented by white flowers and a subtle mineral edge. The palate is medium to full-bodied, fruit-forward, and finishes crisp and clean. It works well with grilled shrimp, roast pork, or a creamy pasta dish.
