Made from a foundation of Barolo DOCG wine, Cocchi Barolo Chinato is a Piedmontese aperitif that blends fermented Nebbiolo grapes with a measured infusion of cinchona bark and a standardized botanical formula.

The production method matures raw Barolo wine beforehand, fortifies it with neutral grape spirit, and marinating the liquid in cinchona pods along with gentian, rhubarb, orange peel, and selected spices. This prolonged contact extracts bitter quinoline compounds and aromatic oils while rounding the wine’s natural acidity and tannic edge.

Aromas open with dried cherry, cured tobacco, and candied citrus rind, followed by piney herbs and wormwood.
