Domaine de Canton (Ginger) Liqueur 750ml
Domaine de Canton is produced in Jarnac, in France's Cognac-producing Aquitaine region, though the liqueur's story stretches back further to a Chinese-made ginger liqueur called Canton, produced in Guangdong province from the early 1990s under the name of its founder, N.J. "Sky" Cooper. His son John Cooper relaunched the liqueur in its current French form in 2007, naming the company after his grandfather Maurice Cooper, also a liqueur maker, and moving production to a cognac house overseen by a fourth-generation master distiller.
The liqueur begins with hand-cut baby ginger, selected for its delicate heat, which is macerated in eau de vie, a clear grape-based distillate. That infusion is then blended with French Cognac along with Tahitian vanilla and Provençal honey, with each batch tasted before release. Domaine de Canton is made without preservatives, additives, or artificial colorants, which is why the finished liqueur shows some natural variation in hue from batch to batch. It is bottled at 28% ABV.
The liqueur pours a pale straw yellow with faint golden flecks. On the nose it offers warm candied ginger, brandy, and a touch of lemon zest. The palate opens syrupy and honeyed before fresh ginger heat builds along with citrus-like acidity, keeping the sweetness in check, and the finish lingers with a peppery, spiced warmth.
