Luxardo's history begins in 1817, when Girolamo Luxardo relocated to Zara, on the Dalmatian coast, where his wife Maria Canevari began refining a cherry liqueur long made in local convents. Girolamo founded the family distillery in 1821 to produce her recipe commercially, and after years of refinement the Emperor of Austria granted the company an exclusive privilege recognizing its quality. Following the Second World War, the family moved operations to Torreglia in Italy's Veneto region, where descendants of the founding family still run the company today using Maria's original 1821 formula.

Maraschino is one of the few liqueurs made by true distillation rather than simple infusion. Luxardo marasca cherries, a sour variety grown exclusively by the family, are harvested each summer and macerated whole, pits and all, in larch wood vats along with leaves and branches from the same trees for up to three years. The mixture is then distilled in copper pot stills, with only the purest heart of the distillate kept. This spirit matures further in Finnish ash wood, a wood chosen because it does not impart color, before being sweetened and diluted to bottling strength.

The result is a clear, dry liqueur with delicate aromas of cherry blossom and almond. On the palate, tart cherry meets a pronounced almond character drawn from the distilled pits, layered with marzipan and floral notes, finishing clean with lingering fruit and a touch of bitterness.

"When Luxardo marasca cherries are harvested at the beginning of every summer, they are put in alcoholic infusion in larch-wood vats together with some leaves and branches of the same trees for up to three years. When ready, both the liquid and the solid parts are distilled in traditional copper pot stills, separating the heart from heads and tails. Only the heart of the distillate is then allowed to mature in ash-wood vats.



The last process consists in transforming the distillate in liqueur by adding a simple syrup of water and sugar lowering the ABV to 32%. Crystal clear in colour, the aroma is typical of marasca cherry distillate with strong alcohol spirit and roasted nuttiness, while the taste results smooth but sharp at the same time with hints of dark chocolate, vanilla and orange marmalade. The tall green bottle with its red cap is still hand-plaited in straw within the company, and resembles the Maraschino bottles produced in Zara in the early days, where the straw was placed in order to prevent damage during transportation."
