Molinari was founded in 1945 in the port city of Civitavecchia, northwest of Rome, by Angelo Molinari, an expert perfumer who understood the art of blending aromas. Molinari's family, including his children Marcello and Mafalda, promoted the liqueur among the restaurateurs and cafe owners of Rome's Via Veneto, where it became closely tied to the glamour of the city's La Dolce Vita era and reportedly earned praise from admirers including Frank Sinatra. The recipe remains a closely guarded family secret, with only one member of each generation entrusted with the full formula, and the company today is Italy's best-selling sambuca, holding the exclusive legal right in Italy to use the designation "Extra."
Production begins with essential oils extracted from star anise through steam distillation, a method that captures the plant's aromatic compounds without extracting bitterness. Sugar and a small number of additional natural flavorings are blended in to round out the profile before bottling. The liqueur is produced today at Molinari's modern facility in Colfelice, south of Rome, and is bottled at 40% alcohol by volume, a strength typical of Italian anise liqueurs and higher than many competing sambucas.
Molinari Sambuca offers a clean, pronounced anise character on the nose, layered with menthol, licorice, and citrus peel. On the palate it is smooth and sweet, with a grassy undertone and a slightly flinty finish, traditionally served with a few coffee beans floating in the glass.
