Distilleria Varnelli was founded in 1868 in the Sibillini Mountains of Italy's Marche region by Girolamo Varnelli, a dedicated herbalist who applied his deep knowledge of local medicinal plants to spirits production. His son Antonio later expanded the recipe catalog and helped spread the Varnelli name across Italy, and the distillery remains independently family owned today, now run by the fourth generation, the sisters Elda, Gigliola Simonetta, Mari Donatella, and Orietta Maria Varnelli. Amaro dell'Erborista is built on a recipe unearthed from Girolamo's original documents, recreating a nineteenth century style amaro true to the founder's apothecary roots.

The amaro is made from a decoction of herbs, roots, and barks, prepared the traditional way over an open wood fire rather than through cold maceration. Cinchona bark and other local botanicals form the backbone of the blend, and it is sweetened exclusively with pure honey sourced from the Sibillini Mountains rather than refined sugar. The finished liqueur is left unfiltered and uncolored, bottled at 21 percent alcohol by volume.

The result pours a tobacco brown with brick red undertones, cloudy and expressive in the glass. Aromas of stewed fruit, raisin, gentian, rhubarb, and sandalwood mingle with honeyed sweetness, while the palate turns dry, bitter, and notably tannic, drying the mouth before triggering an intense, lingering salivation. A touch of wood smoke carries through to a long, honeyed finish.
