H.M. Borges traces back to 1877, when Funchal merchant Henrique Menezes Borges began seeking out and aging the island's finest wines rather than producing them himself. That founding approach still shapes the house today, now guided by fourth-generation cousins Helena and Isabel Borges, who oversee a small, tightly knit team. All of the firm's work, from sourcing to bottling, happens inside a single historic building in the heart of Funchal, occupied by the company since 1924. Borges is counted among a small number of remaining independent Madeira bottlers, relying on long-standing relationships with growers scattered across the island.

This Sercial comes from vineyards planted at higher elevations, where the grape's naturally high acidity is preserved by cooler conditions. Fruit is hand harvested and pruned before fermentation, which is allowed to run longer than in sweeter styles, leaving the finished wine dry. The wine then spends fifteen years aging in oak casks under Madeira's traditional canteiro process, in which heat gathered by the aging building itself, rather than mechanical ovens, slowly cooks and concentrates the wine over years of exposure.

The result is a topaz-colored wine with fresh, nutty aromas and a bright, saline edge. On the palate it stays dry and taut, with balanced acidity carrying flavors of dried citrus peel and toasted wood through a long finish. Its crispness makes it a natural aperitif, and it also pairs nicely with salted almonds, briny olives, or a light seafood soup.
