123 Organic Anejo (Tres) Tequila 750ml
Founder David Ravandi launched 123 Organic Tequila in 2010, building one of the first certified organic and biodynamic tequila brands on the market. Production takes place at Tequila Las Americas (NOM 1480) in Amatitán, in the Valley of Tequila region of Jalisco, where farming follows both organic and biodynamic principles, accounting for soil health and lunar cycles rather than relying on pesticides or synthetic fertilizers. The brand's commitment to sustainability extends to its packaging, with each bottle hand-blown from recycled glass and labeled using recycled paper and soy-based inks.
Añejo Tres begins with lowland blue Weber agave that is slow cooked in traditional stone clay ovens before being milled and fermented in open-air stainless steel tanks. The spirit undergoes double distillation in stainless steel stills fitted with copper coils, then rests for eighteen months in white oak barrels, considerably longer than the minimum required for the añejo category, allowing the wood to leave a deep and pronounced mark on the finished tequila.
That extended aging gives the tequila a deep golden hue and an assertive oak presence. Initial aromas of tannin and wood oil soften with time in the glass, revealing layers of caramel, baking chocolate, and warm tobacco, with a cracked pepper note and a long, warm finish that carries the toasted oak through to the end.
