Banhez Mezcal is owned and operated entirely by the families of the U.P.A.D.E.C. cooperative in San Miguel Ejutla, Oaxaca, where more than 36 households share in growing, harvesting, distilling, and packaging every bottle themselves. This collective structure reflects a broader commitment to community-driven production, allowing the cooperative to preserve traditional methods while ensuring the economic benefits stay within the families who do the work. Pechuga expressions like this one hold a special place in Oaxacan culture, traditionally reserved for celebrations such as weddings, quinceañeras, and other significant life events.

This pechuga is made from 100% Espadín agave, distilled once through a copper still fitted with a refrescadora, a cooling mechanism that helps preserve the agave's roasted character during the process. Indigenous seasonal fruits are added alongside a raw turkey breast, which is suspended in the still so the rising vapors pass through it, imparting fruity aromas and additional texture as the spirit condenses. This method, known as "destilado con pechuga," has been practiced across Oaxaca for centuries as a way of marking special occasions.

The nose offers citrus peel, coriander, and roasted nuts, while the palate develops notes of clove, dried apricot, and a savory, broth-like richness balanced against light chili heat.
