Cascahuin Tahona Blanco Tequila 750ml
Cascahuín is produced by the Rosales family, who have made tequila since 1904, at their Destilería Cascahuín in El Arenal, in the Tequila Valley of Jalisco. Master distiller Salvador "Chava" Rosales Torres now leads the house, and having long supplied agave and distillate behind well-known boutique labels, Cascahuín released this Tahona Blanco under its own name in 2006 to claim recognition for its own craft.
This blanco is made from 100% Blue Weber agave grown in the valley lowlands, cut into uniform pieces and slow cooked for around 25 hours in traditional stone and brick ovens before resting a full day. The juice is extracted entirely by tahona, a massive volcanic stone wheel that crushes the roasted piñas, then fermented in the open air within cement tanks using natural yeast and the agave fibers themselves. After two distillations in copper pot stills, the spirit is proofed with natural spring water and bottled unaged, additive free, at 42% ABV.
The nose leads with cooked agave, fresh mint, and citrus zest layered over earthy mineral notes. On the palate the tequila is full bodied and rustic, with honeyed sweetness, herbal and vegetal character, and savory green notes, finishing long, crisp, and mineral driven with lingering agave.
