Cinco Sentidos Bicuixe Verde Agave 750ml
Cinco Sentidos began as the house mezcal for El Destilado, a restaurant in Oaxaca City known for its inventive menu and deep agave spirits program, before evolving into an export brand in 2017 under owner Jason Cox. The name refers to the five senses that its mezcaleros rely on throughout production, since no modern machinery or measuring tools are used at any stage. Cox pays his producers above market rates and lets each decide how much they want to make, backing that model with a profit-sharing program that helps growers invest in land, equipment, and their families.
This expression is made from wild Bicuixe Verde, a variety within the Agave karwinskii family, harvested and distilled by mezcaleros in the Miahuatlán region of Oaxaca. The piñas are roasted underground before being crushed by a traditional tahona, often pulled by animal or tractor power, and fermented naturally in pine vats using local well water. The mash is then double distilled in copper stills, and because the spirit remains uncertified as mezcal under Mexican regulation, it is labeled instead as "Destilado de Agave."
The nose is intensely green and vegetal, with notes of pine, citrus rind, and fresh herbs. On the palate, that vegetal character carries through alongside a chalky minerality and subtle fruit sweetness, finishing clean with a lingering herbal edge that reflects the wild character of the Bicuixe agave.
