Cinco Sentidos began as the house pour at El Destilado, a mezcaleria and restaurant in central Oaxaca, before founder Jason Cox turned it into an export label built around transparency and fair pay for producers. Rather than a single distillery, the brand curates small batches from a rotating cast of maestro mezcaleros across Oaxaca and neighboring states, each working without modern machinery and relying on generations-old sensory judgment rather than instruments. Every release is labeled "Destilado de Agave" since it falls outside official mezcal certification, and the back label typically credits the specific palenquero and village behind that bottling.

This expression is distilled from maguey pulquero, an agave traditionally tapped for its sap to make pulque rather than roasted for spirit production. Slow growing and rich in natural sugars, the plant is instead cooked in an underground earthen oven, mashed by hand, and fermented with native yeasts before a patient double distillation in small copper or clay stills, following the same rustic, low-intervention methods used across the Cinco Sentidos range.

Distilling a pulque agave produces a spirit unlike typical espadin mezcal. It leans sweet and funky, with fresh pulque-like tang, clay minerality, and notes of tropical fruit, honey, and light barnyard earthiness balancing the vegetal roasted agave core.
