Cruz de Fuego A. Agustifolia (Espadin) Mezcal 750ml
Cruz de Fuego is the work of mother and son team Margarita Blas and Carlos Méndez Blas, who share a single palenque in Santiago Matatlán, Oaxaca, and follow techniques passed down through their family for generations. Their approach centers on hospitality as much as craft, treating each bottle as an invitation to experience the patience and generosity behind traditional Mexican mezcal making, relying on nothing more than fire, stone, and their own senses to guide the process.
This bottling uses 100% Espadín, botanically Agave angustifolia, harvested between seven and ten years of age from fields sitting around 5,800 feet in elevation. The agave hearts are roasted in a stone-lined conical pit oven that has been heated by wood fire for roughly half a day before the piñas go in and are buried under earth to cook for several days. Once roasted, the agave is crushed on a traditional stone tahona, then fermented in open-air wooden vats using water drawn from an underground spring. The mash is double distilled in traditional copper pot stills, yielding a clean, approachable spirit.
The nose carries distinct smoke, white flowers, and stone fruit. On the palate, black pepper and fresh root vegetables bring a light, easy sweetness, closing on a soft, lingering warmth.
