Espolon was founded in 1998 by Cirilo Oropeza, a longtime figure in the spirits industry who began his career at a rum distillery in the 1960s before turning his attention to tequila decades later. Working from Destiladora San Nicolas in the Los Altos highlands of Jalisco, Mexico, Oropeza built the brand around striking Day of the Dead style artwork and the image of a fighting rooster, referencing the spur, or espolón, for which the tequila is named. Campari Group acquired the distillery and brand in 2008 and has kept the tequila widely available and affordably priced ever since.

This blanco is distilled from 100% blue Weber agave grown across the highland and lowland regions of Jalisco. The agave piñas are cooked slowly, then milled and fermented in stainless steel tanks before undergoing a double distillation through both column and pot stills with copper coils. Unlike Espolon's aged expressions, the blanco skips barrel time entirely and is bottled clear shortly after distillation, preserving a fresh, direct expression of the agave.

The nose offers sweet cooked agave with tropical fruit and lemon zest, along with a light herbal lift. On the palate the body is soft and light to medium weighted, bringing bright agave character layered with pepper, vanilla bean, and notes of grilled pineapple, finishing clean with a lingering touch of spice.
