Los Siete Misterios was founded in 2010 by brothers Eduardo and Julio Mestre after a trip through Oaxaca's Sierra Sur left them determined to bring traditional clay-pot mezcal to a wider audience. They settled in Sola de Vega, a remote municipality renowned for both wild Tobalá agave and olla de barro distillation, and built a family palenque where their mother, Doña Ángeles, and her husband now oversee the fields and welcome the local mezcaleros who produce each batch. The brand remains committed to ancestral methods at a time when much of the category has industrialized, working village by village to keep those small-batch traditions intact.

This expression is distilled from Coyote, a rare local variety of Agave americana often mistaken for its close relative arroqueño despite yielding a markedly different spirit. The mature agave hearts are roasted slowly in a horno de tierra, an earthen pit oven, then hand-crushed with wooden mallets rather than machine milled. The crushed agave ferments naturally with ambient yeast before a patient distillation in small clay pot stills, a technique that makes up a tiny fraction of mezcal production and shapes much of this bottling's character.

Coyote agave brings pronounced herbal notes to the glass, layered with damp earth, wild herbs, and a whisper of smoke. The clay pot distillation rounds out the spirit with a subtle loamy sweetness, floral hints, and a soft, mineral-driven finish.
