Los Siete Misterios Pechuga Mezcal 750ml
Los Siete Misterios was founded in 2010 by brothers Eduardo and Julio Mestre, who built their brand around preserving ancestral mezcal production in Sola de Vega, Oaxaca. This Pechuga is a rare departure from that home base, produced instead in Santiago Matatlán in small, once-a-year batches using a recipe the Mestre family varies each season. The ingredients are chosen by the brothers' mother, Doña Ángeles, alongside a maestra mezcalera, continuing a tradition historically reserved in Oaxaca for weddings, funerals, and religious festivals.
The base spirit comes from mature Espadín agave, cooked in a traditional underground earthen oven and fermented naturally before an initial double distillation. For the third and final pass, local fruit and spices are added to the still, and a raw chicken or turkey breast is suspended inside so the rising vapor passes directly over the meat, lending the finished mezcal a subtle savory depth. Fewer than 500 liters are produced each year, making this one of the label's most limited releases.
The nose offers sweet guava, plum, and apple alongside delicate smoke and violet florals over cooked agave and roasted caramel. The palate turns sweet and full-bodied, with pine, candied sweet potato, and pineapple balanced by cumin, star anise, and cardamom through a long, warming finish.
