Traditionally reserved for the fermented drink pulque rather than distilled spirits, this agave variety yields a mezcal of wild complexity — roasted agave, wild honey, tropical fruit, beeswax, and fresh herbs on the nose, with a rich, viscous palate of cooked agave sweetness, citrus pith, and a long, earthy, mineral finish. Produced using ancient indigenous methods — pit roasting, wild fermentation, and small still distillation — this is a living artifact of Mexican heritage and craft. Extremely limited.
